Soapstone, typically gray in color, it's highly resistant to heat yet softer than most of its counterparts, that why its use for high school science lag countertops. Marble comes in a variety of colors, running from almost pure white to pale pinks and blues and or dramatic blacks and browns. It is susceptible to stains more than most countertops but a penetrating silicone sealer well maintained keeps it in good state.
